Food properly labeled; original container
3-302.12 Except for containers holding FOOD that can be readily and unmistakably recognized such as dry pasta, working containers holding FOOD or FOOD ingredients that are removed from their original packages for use in the FOOD ESTABLISHMENT, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the FOOD. Observed that a majority of the containers in the walk-in cooler did not contain labeling. Informed the Person-in-Charge (PIC) that anything that is taken out of it's original packaging and placed in a new container should contain labeling to indicate what the food item is. This is to ensure that everyone that is working in the facility is aware of what the food item is and does not pose a potential allergen hazard, etc. This is a repeat violation.
