3-501.16 (A) Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under §3-501.19, and except as specified under (B) and in (C ) of this section, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (2) At 5ºC (41ºF) or less. Reach-in-Refrigerator (RIR) Observed multiple Temperature Controlled for Safety (TCS) foods that were not maintaining cold-holding temperatures (41F degrees or below). The ambient temperature of the refrigeration unit registered a minimum of 37F degrees with some food product in the RIR temping at 41F degrees or below. Observed overcrowding of product on some shelves that may not be allowing the facilitation of air circulation; in addition, observed a lot of bagged product stacked on top of each other in the fridge not allowing for proper cold-holding.
