2-102.11(C) Responding correctly to the inspector's questions as they relate to the specific FOOD operation. The areas of knowledge include: (17) Explaining how the PERSON IN CHARGE, FOOD EMPLOYEES, and CONDITIONAL EMPLOYEES comply with reporting responsibilities and EXCLUSION or RESTRICTION of FOOD EMPLOYEES. Facility does not have any documentation that demonstrates that training is provided to food employees about employee health.

Clean-up of Vomiting and Diarrheal Events

2-501.11 Clean-up of Vomiting and Diarrheal Events. A FOOD ESTABLISHMENT shall have procedures for EMPLOYEES to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the FOOD ESTABLISHMENT. The procedures shall address the specific actions EMPLOYEES must take to minimize the spread of contamination and the exposure of EMPLOYEES, consumers, FOOD, and surfaces to vomitus or fecal matter. Facility does not have any written procedures for fecal/vomit accidents nor they have all of the protective personal equipment (PPE) to use during those incidents.

Adequate handwashing sinks, properly supplied and accessible

5-205.11 (B) A HANDWASHING SINK may not be used for purposes other than handwashing. The only handwashing sink in the facility has a water filter connected to the faucet.

Food-contact surfaces: cleaned and sanitized

4-702.11 UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning. Observed food employee washing a ladle with soap, rinsing it but not sanitizing it and was about to use it to serve food.
