2-501.11 Clean-up of Vomiting and Diarrheal Events. A FOOD ESTABLISHMENT shall have procedures for EMPLOYEES to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the FOOD ESTABLISHMENT. The procedures shall address the specific actions EMPLOYEES must take to minimize the spread of contamination and the exposure of EMPLOYEES, consumers, FOOD, and surfaces to vomitus or fecal matter. Facility When asked if the facility has written procedures for responding to a vomit/fecal accident, the cook stated that she had put up a handout provided by the Health Department during a prior inspection, but that it was taken down for looking untidy. The PIC stated that they do not have official procedures, but that she and another manager would wear gloves and take care of it.

    Food-contact surfaces: cleaned and sanitized

4-501.114 A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at contact times specified under 4-703.11(C) shall meet the criteria specified under §7-204.11 Sanitizers, Criteria, shall be used in accordance with the EPA-registered label use instructions, and shall be used as follows: (C) A quaternary ammonium compound solution shall: (1) Have a minimum temperature of 24°C (75°F), (2) Have a concentration as specified under § 7-204.11 and as indicated by the manufacturer's use directions included in the labeling, and (3) Be used only in water with 500 MG/L hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions; Three Compartment Sink The cook stated that the facility uses quaternary ammonium compound (QAC) tablets to create their sanitizing solution in their three compartment sink. Observed that the sink was in use and that food-contact utensils and dishes were actively drying in a rack beside. Using QAC test strips provided by the facility and the inspector, verified that the concentration of chemical in the solution was less than 150 ppm. Per the manufacturer's instructions, the concentration of the solution should be at least 200 ppm to be effective. When asked, the cook stated that she generally adds five tablets and that the solution appeared to have too much water added.
