Cook line make units Observed several TCS foods holding in the top of the make units above 41F when measured with a probe thermometer. Ambient air temperatures were taken for all units using a MIN/MAX thermometer for 10 minutes each, all measuring below 41F. Observed the flip tops to be open. After discussion with PIC, determined the items were intended to be cold holding after prepping/sitting out at ambient kitchen temperature without ever being properly cooled down to or back down to 41F or below before placing in the units. PIC stated items were prepared at 10am before opening for the day.
