C. Operations
PCC 8.08.030 C4. All food preparation and storage must be done at the commissary or inside the mobile unit, unless the department approves a variance. Observed ice chest and a chest with lemonade stored in it outside of the food truck. A ladle was seen inside the lemonade. PIC stated that they do scoop the ice and lemonade outside the food truck. All food preparation needs to be done inside the food truck. Discussed their options for having an auto dispenser for ice and lemonade in a sealed container with a spigot so there's no risk of contamination. Corrected on site but violation is being unresolved due to a pattern of noncompliance so it can be followed up on next inspection.
