4-301.11 EQUIPMENT for cooling and heating FOOD, and holding cold and hot FOOD, shall be sufficient in number and capacity to provide FOOD temperatures as specified under Chapter 3. reach in cooler (RIC) Observed ambient temperature of RIC at 58F. Observed no TCS foods holding in unit at time of inspection. Reach in cooler is the only cold holding unit for this permitted area of facility. Person in charge (PIC) stated teaching-demonstration kitchen is only used monthly and TCS foods are held in cold holding unit in permitted grocery area of facility. Observed cold holding equipment of grocery section of facility in good repair at time of inspection.
