Food-contact surfaces: cleaned and sanitized
4-501.114 A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at contact times specified under 4-703.11(C) shall meet the criteria specified under §7-204.11 Sanitizers, Criteria, shall be used in accordance with the EPA-registered label use instructions, and shall be used as follows: (A) A chlorine solution shall have a minimum temperature based on the concentration and PH of the solution as listed in the chart provided under this section (4-501.114) within the 2013 FDA Food Code; Mechanical Dishwasher Observed that bowls for the children had just been cleaned using the mechanical dishwasher onsite. Using chlorine test strips, verified that there was no concentration of sanitizer on the surface of the food-contact equipment after a cycle. The PIC stated that they had been having issues with the equipment before, which required them to talk to the city in order to get it repaired. Another cycle was run and the PIC manipulated the sanitizer knob manually during the cycle; verified using test strips that there was still no concentration. Observed that there was still enough sanitizer in the connected container, and that it didn't seem to be coming through the tubing.
