Observed Temperature Controlled for Safety (TCS) food was not being cold-held at 41F or less. When asked, Person-in-Charge (PIC) and food employee stated that the facility had recently been having problems with the "pizza line" make unit as the temperature fluctuates constantly. PIC stated that the facility had to remove items from make unit and place TCS food items in walk-in fridge because the TCS food items were not being held at 41F or less at the bottom of the make unit. Otherwise, PIC was not able to detail why the TCS foods were cold-holding above 41F. PIC and food employee stated the items were removed from the walk-in and placed in the make unit around 8AM this morning and have been kept inside of the make unit. Facility had placed a work order to repair the refrigerator over the weekend. Lowest ambient temperature of the make unit measured at 34F.
