The areas of knowledge include: (11) Explaining correct procedures for cleaning and SANITIZING UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT; When asking about the 3 compartment sink cleaning process for dishes, PIC states they only use dish detergent and then rinse off with water. PIC stated they do not normally have an additional sanitizing step.
