4-501.11 (A) EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 and 4-2. A) Dish machine 2) Oven A) Observed the dish machine was not operational at the time of inspection. Person in Charge stated the rinse cycle was not reaching the required temperature. PIC showed a red tag out tag dated 7/28/26. Tag has a work order number of FST 2506. Facility is using the three compartment sink to wash/rinse/sanitize dishes. B) Observed one of the Montague two door ovens was not operational at the time of the inspection. Person in Charge stated that the oven was not heating up. PIC showed a red tag out tag dated 7/28/26. Tag has a work order number of FST 2507. Facility is using a second back up oven to heat up items.
