3-501.16 (A) Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under §3-501.19, and except as specified under (B) and in (C ) of this section, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (2) At 5ºC (41ºF) or less. Retail chest cooler dairy section Observed TCS foods cold holding for retail sale holding above 41F. Ambient air temperature was measured in 2 sections of the cooler using a MIN/MAX thermometer for 10 minutes each measurement; ambient air temperatures were observed to be above 45F. Also observed the middle section sliding glass door to be missing; PIC stated the door was shattered about a month prior and they are wait for a replacement.
