3-501.16 (A) Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under §3-501.19, and except as specified under (B) and in (C ) of this section, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (2) At 5ºC (41ºF) or less. Observed minimal amounts Temperature Controlled for Safety (TCS) foods that were stored in the Mobile Food Unit's (MFU) beverage cooler that were not maintaining minimum cold-holding temperatures (41F degrees or below). The ambient temperature of the refrigeration unit was at 54F degrees. Observed some overcrowding of beverages in the unit that may be hindering the facilitation of air circulation. In addition, observed that the fan was not in working condition. The Person-in-Charge (PIC) stated that prior to the inspector's arrival they had placed multiple cases of hot canned beverages into the cooler and may be the reason for the spike in temperature. Observed some ice build towards the back part of the refrigerator that may indicate that the refrigeration unit may be capable of cold-holding. PIC stated that they don't normally store food in this refrigeration unit and only did so today to account for a surplus of orders for the event that they are attending. 4/24/2026 5:57:19 PM -07:00 - Rice containers: 50 °F 4/24/2026 5:57:18 PM -07:00 - Various bags of gyozas and dumplings - Range: 50F - 55F: 52 °F
