Cooling - Cooked time/temperature control for safety food was not cooled in accordance with the Food Code.

Observed a large pot of birria in the walk-in cooler with a temperature above 41 degrees (see temp log). Person in charge stated the birria had been prepped at 7pm on 10/6 and placed in the walk-in cooler to cool. Person in charge voluntarily discarded the birria.

TCS food not thawed in accordance with the Food Code

Observed chicken thawing in bus tubs at room temperature in the back prep area. Person in charge moved the chicken to the walk-in cooler.

Employee accommodations not clearly designated for eating/drinking/smoking

Observed a cell phone on a prep table in the back kitchen area. Person in charge removed the cell phone.

In-use utensils not properly stored between uses

Observed a scoop in the left make-table stored with the handle touching the contents in the container. Person in charge moved the scoop to be stored properly. Observed a scoop in the bulk sugar container in the back kitchen stored with the handle touching the contents. Person in charge moved the scoop so that the handle was no longer touching the contents.
