Products in the tall reach-in cooler (salsa, cooked chicken, etc) had internal temperatures of 43 - 56*F. Ambient temperature ranged from 40-50*F. Products had been in unit for 3 hours. All product out of temperature was discarded. Product in temperature was moved to a working cooler. CORRECTED. (Temperature dial was lowered. Ambient temperature decreased to 40-41 throughout entire unit). Inspector discussed close monitoring of internal temperatures of products in the tall cooler).
