Plumbing system not maintained in good repair

Observed small drip leak under middle basin of 3 compartment sink. (non-critical)

Reheating for Hot Holding - Time/temperature control for safety food or Ready-to-eat food was not reheated for hot holding in accordance with the Food Code.

Observed rice placed in steam table from lowboy cooler without being reheated first (see temp log). Employee reheated rice to 165 degrees and placed back in to steam table at the time of inspection.

Equipment not maintained free of encrusted grease/soil deposits

Observed grease build up on hood vents.

Nonfood-contact surfaces not cleaned at frequency to prevent buildup of residue

Observed dust build up on walk in cooler fan guards.

RTE TCS, Disposition - Ready-to-Eat, Time/Temperature Control for Safety Food was not discarded in accordance with the Food Code.

Observed bottles of mayo, thousand island, and ship sauce to be past their date marking in salad lowboy. Person in charge discarded items at the time of inspection.

Equipment & Food-Contact Cleaning Frequency - Equipment food-contact surfaces and utensils shall be cleaned according to the Food Code.

Observed build up on ice machine catch plate. Person in charge cleaned and sanitized catch plate at the time of inspection.

TCS food not thawed in accordance with the Food Code

Observed a package of raw burger patties thawing at room temperature. Person in charge placed package in reach in cooler at the time of inspection.
