Sewage and Waste Water Properly Disposed

PRIORITY VIOLATION-5-402.13 - Priority: Conveying Sewage Addl Notes: Observed drain under the 3-compartment sink actively backing up. 3-compartment sink itself drains into the mop sink. When 3-compartment sink or mop sink is turned on, drain backs up. This is the only drain that is backing up at time of inspection. PIC stated they had issues with backup from this drain about 1 month ago and it was serviced at that time. Informed PIC that operation of a food establishment should not occur at the same time that active backup is occurring. Fixtures should be able to work and drain properly without floor drains backing up. Permit is suspended at time of inspection for this reason. Corrective Action: Correct at once.

Person in charge (PIC) is unsure of when those foods entered the temperature danger zone. Walk-in cooler was turned off by maintenance workers around 6am. PIC discarded those food items at time of inspection. 2) Observed display cooler with ambient temperature of 52-54°F. Internal temperature of TCS foods (chicken sandwiches, cheese, cream cheese) ranges from 54-55°F. Informed PIC that TCS foods must be maintained at 41°F or below. PIC is unsure when the cooler went down. This cooler has a temperature sensor that is not working currently. PIC discarded those items at time of inspection. Corrective Action: Corrected at time of inspection.
