In walk in cooler large plastic bin of cut lettuce (57F - Cooling) at 11:00 since 10:35 to 57F 11:20, at this current rate of cooling product will not reach 41F within 4 hours, discussed with operator to move product into challis bins and remove lids to allow adequate air flow cooling.
