  Violation of Code: [511-6-1.04(4)(u)] Observed RTE apple stored uncovered and unprotected from contamination. COS/CA: Apple discarded and PIC will properly cover/protect the RTE foods. 1. Except for nuts in the shell and whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer before consumption, food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards, display cases, or other effective means.   Violation of Code: [511-6-1.07(5)(a),(b)] Observed the reach-in cooler located near the ice machine unable to maintain temperature at 41F or below (at 56F). Observed standing water on the bottom shelf of the cooler. CA: PIC will have the cooler serviced and will ensure that no TCS food items are stored in the cooler until it is operating properly and able to maintain 41°F or below. PIC will clean and dry the interior of the cooler and ensure that no food containers are stored in the affected area until it is fully cleaned and dried. 5) Maintenance and Operation.
