Violation of Code: [511-6-1.05(7)(b)] Observed accumulation of dust and debris on the interior walls of the ice machine. Additionally, observed heavily scored cutting boards in the main kitchen. CA advised PIC to clean and sanitize the interior surfaces of the ice machine to remove accumulated dust and debris. Replace heavily scored cutting boards to ensure easily cleanable surfaces. Wiping cloths: properly used and stored
Violation of Code: [511-6-1.05(10)(b)] Observed wet towels being stored in buckets without sanitizer solution. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. PIC had wet towels discarded in the soiled towel container. New Violation.
