Violation of Code: [511-6-1.04(6)(d)] Observed 11 containers of oxtail and 1 container of cheese sauce in main kitchen walk in cooler not cooling at a rate to reach 41F within 4 hours. Oxtail and cheese sauce began cooling at 9:00am per PIC. C/A: Cooked time/temperature control for safety food shall be cooled: (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); P and (ii) Within a total of 6 hours from 135°F (57°C) to 41°F (5°C) or less. COS: Pans of oxtail and container of cheese sauce were moved to walk in freezer. 7 pans of oxtail reached 41F at 2:45pm, cheese sauce reached 34F at 2:45pm. Remaining 4 pans of oxtail were discarded.
