Iowa food code item 22 (Risk Factors)

Observation: In the cold table located beside the flat top grill on the cook line, observed raw ground beef patties holding at temperatures between 44*-45*. Two packages of patties were stacked on top of one another in the cold well. All other products down in the cold well were observed at 41*F or below. Corrected by: only storing one package of patties in the cold well to ensure proper cold holding. Cheese slices in the top of the cold prep table across from the grill were observed holding at temperatures between 43*-46*F. Corrected by: switching cheese slices to deeper pan and only storing a small stack of slices at a time to ensure proper cold holding. Prepackaged individual serving containers of coleslaw observed being stored in the cold prep table behind the ordering counter. Containers were stored 3-containers high in the table. The containers at the top were observed between 47*-48*F while the containers along the bottom were 41*F. Corrected by: relocating containers with elevated temperatures to the walk-in cooler for rapid cooling and only storing one layer of coleslaw at a time in the table to ensure proper cold holding temperatures.
