  --Observation: Meatballs registered 121 degrees F. in the hot holding unit. Manager stated the meatballs where in the hot holding for 10 minutes. Corrected by: Meatballs were reheated to 165 degrees F and placed back in hot holding.

  --Observation: Potato salad and cottage cheese on the salad bar registered 45 degrees. Employee stated they forgot to turn the cold holding unit on prior to putting the cold foods in the salad bar. Employee stated the food was in there for 10 minutes. Corrected by: Discarding the cottage cheese and the potato salad. Inspector rechecked the food items in the cold holding unit and food is maintaining 41 degrees F.--Observation: Cooked elbow macaroni in a large plastic container in the walk in cooler with the lid tightly fastened on container registered 45 degrees F. Employee stated the food product was made 2 days ago. Corrected by: Voluntary discarding food product.
