Conducted routine inspection of facility today. Facility has two active Certified Food Protection Managers on staff, an Employee Reporting Agreement Policy in place, and a written, established procedure available for responding to the clean-up of bodily fluids. Facility corrected all violations on site. No further action is required at this time. Long Term Corrective Action: Item #16: Facility has agreed to change their utensils out in accordance with the same timeframe as their foot products in hot holding to align with a 4-hour frequency change. Item #16: Facility agreed to add their utensil storage bins to a weekly cleaning checklist to ensure that bins are being washed, rinsed, and sanitized on a routine basis to prevent the build up of soil/food debris. Item #22: Facility plans to utilize ice in their chill table to ensure proper cold holding of sliced tomatoes and shredded lettuce at 41*F or below. If facility monitors temperatures with ice method and continues to have issues cold holding at 41*F or below, they plan to switch to using time as a method of control for their cold TCS toppings.
