Violations (3)

  • 3-501.16(A)(2)CriticalCorrected on site

Iowa food code item 22 (Risk Factors)

Observation: Inside of the cold prep table in the kitchen, an individual package of avocado spread was observed holding at 46*F and saran wrapped portions of sliced cheeses were observed between 45*-47*F. In both cases, products were stored inside of plastic containers, stacked atop other products in the cold well. Corrected by decreasing the amount of product stored within the containers in the table so that all products were only one level high within the cold wells to ensure proper air circulation around the TCS product to maintain holding temperatures of 41*F or below. All other products stored directly inside of the cold wells were observed at 41*F.

  • 3-501.15(A)CriticalCorrected on site

Iowa food code item 33 (Good Retail Practices)

Observation: Facility was observed placing individually portioned cups of hard boiled eggs prepared earlier today inside of the make table in the kitchen to cool. Egg products were observed between 47*-58*F. Corrected by: voluntarily discarding and discussing that the cold prep table is a piece of equipment that is designed for cold holding and not for rapid cooling. Manager reported that facility's usual procedure is to utilize their walk-in cooler for rapid cooling. All products cooling in the walk-in were observed at 41*F or below. Facility plans to perform all cooling activities inside of the walk-in cooler.
