Routine inspection done in conjunction with an illness complaint. Discussed the complaint with the GM. The GM reports that no employees have been ill, no issues with equipment, and no issues with temperature control. They have had a supplier issue related to chicken, but the facility is not serving chicken due to a manufacturer issue. The facility does have the employee reporting agreement in place as well. The process for cooking roast beef was discussed including record keeping, temperature verification, and holding. The GM is recommended to retrain all employees on the process for roast beef. This complaint will be closed and marked unverifiable.
