An annual routine inspection was conducted today. According to the manager's statement, the dishwasher is out of order. A mechanic came today to assess the situation and look for parts. In the meantime, they used the three-compartment sink. The Inspetor discussed with the manager the importance of following standard operating procedures (SOPs), specifically using all-purpose detergent for cleaning, followed by rinsing and sanitizing. Sanitzer is not for cleaning, and debris must be removed first. Provided non non-smoking sign and DIA Guidance about proper cleaning.
