Routine inspection conducted today. Discussed with Manager B. the issue with the Quat sanitizer used with Cottin Towels, which is showing incorrect pH concentrations. Utnesils in wells sink in between operations, improperly stored between usages. It should be maintained in a container of water at a temperature of 135*F, or in running water with sufficient velocity to flush particulates down the drain. This is particularly important when the sanitizer is used with moist food items, such as milk, cream, or ice creamer.
