License APPROVED Scope of the Business: This establishment will operate as a Cajun kitchen, offering a variety of dishes, including pork, jambalaya, fish, chicken, fruits, vegetables, cookies, cakes, and beverages. A 4-compartment sink will be used for washing vegetables and for hand washing. Standard Operating Procedures (SOPs) should be developed to outline specific times for these tasks. The owner is a certified Food Protection Manager. A routine inspection will be scheduled within the next 90 to 120 days
