Routine inspection done in conjunction with a complaint investigation. The complainant stated several food safety concerns including lack of date marking, temperature control, labeling, moldy product, and no hand soap in the coffee shop. Discussed the complaint with the manager during the inspection. The manager reports that the products used to make sandwiches are pre-cooked and made per customer order. Date marking was observed to be in compliance along with all temperatures. Hand soap was also stocked in the coffee shop. Milk/milk products for customer use were not being controlled by temp or under a TPHC procedure. The facility will write a procedure for the control of those products. Frappe concentrate is allowed to have a 48-hour shelf life per the manufacturer but will now be controlled by temperature for up to 7 days. Facility was also operating an unattended market without proper licensure. Application and requirements will be emailed to get license ASAP. This complaint will be closed and marked unverifiable.
