Pre-opening inspection. MOBILE FOOD UNIT LICENSE IS APPROVED. Scope of Business: Class IV Mobile Unit. Operator intends to offer a limited menu from their main restaurant preparing tacos, tortas, fajitas, quesadillas, burritos and sides. Meat will be the only food items cooked on the mobile unit with the rest of the items being prepared prior to service at the main restaurant and hot held on the mobile unit. Any leftover food will be discarded at the end of service. Unit is equipped to cook, hot/cold hold, reheat and cool. Limitations: Cooling will be limited to the stand-up fridge and chest freezer. Cooking is limited to the flat top grill and stove burner. Extensive changes to the menu or remodeling of the unit require prior approval by the Regulatory Authority. Certified Food Protection Manager: Operator is a certified food protection manager. Certificate was provided and is attached to the report. Discussed need for certified food protection manager to be represented at all 3 mobile units and both food service establishment locations. Firm has been made aware of the basic food code requirements applicable to their establishment and current operation. Person in charge understands the responsibility of the permit holders to comply with those requirements. If a subsequent on-site inspection reveals non-compliance with regulations, the permit holder agrees to bring violations into full compliance within the timeframe specified in the Iowa Food Code. A routine inspection will be scheduled in 90-120 days.
