Routine inspection conducted at the facility on 12-17-25. Facility has a certified food protection manager, employee illness reporting agreement policy, and a procedure to respond to norovirus/bodily fluids. Items that require additional action: #16- Facility agrees to relay issue to manager and to continue to test the dish machine, so that they can ensure that enough sanitizer is being dispensed on a regular basis. #22- Facility agrees to monitor the small refrigeration unit to ensure that it can maintain foods at or below 41 degrees F. If the unit cannot maintain proper temperatures service may be needed. #23- Facility agrees to be diligent on date marking moving forward, and additional training may be needed to ensure all time/temperature controlled for safety product, as well as product made in-house is date marked and discarded within 7 days. As well as ensuring when items are pulled from the freezer they are re-date marked with the pull-date. #28- After the inspector and staff members discussed proper concentration of chlorine sanitizer solution, facility agrees to perform additional training with staff. #33- The facility staff agree to relay issue with manager, so that more training can be done. To ensure that that foods are cooled in a way to ensure items are cooled from 135-70 in 2 hours and from 70-41 degrees F. in 4 hours. #45- Facility staff agree to ensure single use items are stored off of the ground by at least 6 inches. #48- Facility agrees to locate test strips, and store them in an area where kitchen staff have easy access to be able to test sanitizer bucket concentration and the concentration of the mechanical dish machine. #49 & 56- Facility agrees to perform additional cleaning of the ventilation hood and fryers. Hood is not scheduled to be professionally cleaning until March 2026. Long-term corrective action: #16- Additional training in needed for all staff to ensure that everyone is trained on the proper concentration that the mechanical dish machine needs to be. SCHD had conducted a risk factor control study, and the facility was one of the facilities that was part of the study for this violation. Materials for training were provided again by the inspector. #22- Facility agrees to stay diligent on monitoring cold holding temperatures. As well as not placing hot items below in the prep cooler, as this could be the potential reason why items on the top portion of this unit were elevated. The health dept. will follow-up via physical re-inspection on or after 12/20/2025. Any questions can be sent to Raymond.Miller@scottcountyiowa.gov Follow-up will be completed on or after 12/20/2025 by Physical Recheck.
