Routine inspection conducted at the facility on 02/25/2026. The facility has several certified food protection managers, employee illness reporting agreement policy, and a procedure to respond to norovirus/bodily fluid cleanup. Items that require additional action: #11- Discussed approved sources for products containing meats, and the facility agrees to discuss how they plan to move forward with the products coming from Small Town Pastry. Other breakfast burritos are purchased wholesale from their food distributor (Clara's Kitchen Brand). #23- Facility agrees to ensure 7 day date marking (which includes the date of preparation or pull date) is done for all time/temperature controlled for safety products prepared in house or pulled from the freezer. #29 & 32- Facility owner was able to contact corporate office regarding their cold brew process. Currently the facility steeps the cold brew coffee at ambient temperature for ~20 hours. This process falls out of section 3-501.15 requires TCS foods that are prepared at room temperature to be cooled to 41°F or below within 4 hours. Code 3- 501.16 requires these types of foods to be stored at 41°F or below until they are served. Code 3-501.17 requires these foods be served or discarded within seven days. Which is why a HACCP Plan & Variance approved by the Iowa Department of Inspections, Appeals, & Licensing (DIAL) is required, and with a validated process from an accredited food science lab. The facility agrees to brew the product under refrigeration, while they discuss with Makenna Coffee Corporate on next steps. The Scott County Health Dept. will follow-up on or after 03/07/2026. Any questions can be sent to Raymond.Miller@scottcountyiowa.gov Follow-up will be completed on or after 3/7/2026 by Physical Recheck.
