Food Service Establishment change of owner inspection conducted on 04/29/2026. Inspector has been working with the new owner and has made several visits to the facility. Facility has kept the same employees and has made no major renovations or changes to the menu. LICENSE IS APPROVED. Scope of Business: Establishment intends to offer uncooked tuna, uncooked salmon, cooked tempura shrimp, and imitation crab sushi rolls. Facility is currently using time as a control for safety for sushi preparation and is making the rolls to order. Extensive changes to the menu require prior approval by the Scott County Health Department. Discussed the facility being interesting in expanding their menu to offer fried rice and noodle dishes. Discussed the requirement for additional cold holding, potentially a larger hood/ventilation system, and commercial cooking equipment. The inspector will make the connection with the City of Davenport to discuss options and requirements. Limitations: The facility is limited to their current menu and making sushi to order. The facility cannot pre-make and cold hold sushi, with current time as a control procedure, in order to do so, the facility is required to apply for a variance and have an approved HACCP plan from the Dept. of inspections, appeals, and licensing (DIAL.) Item that requires additional action: #14- Facility owner agrees to create an account and begin ordering sushi fish product from Great Wall Seafood which is a food distributor. Previously the facility was purchasing the seafood product from Costco, and was unable provide necessary documentation for the product that meets the requirements from 3-402.12 of the Food Code. Certified Food Protection Manager (CFPM): Facility has had one failed attempt at taking the cfpm exam. Firm has been made aware of the basic food code requirements applicable to their establishment and current operation. Person in charge understands the responsibility of the permit holder to comply with those requirements. If a subsequent on-site inspection reveals non-compliance with regulations, the permit holder agrees to bring violations into full compliance within the time-frame specified in the Iowa Food Code. The facility is approved by the Scott County Health Department to begin operation, so long as the facility meets all plumbing, building, and electrical requirements from the XYZABC OR Scott County Planning & Development. Follow-up will be completed on or after 5/2/2026 by Follow Up-Letter of Correction.
