90-day routine inspection conducted in reference to the pre-opening inspection that took place on 9-26-25. Discussions with the person in charge: Item #22: No violation noted - Discussed with the person in charge keeping the lid on the make table unit during service and/or not filling pans above the rim in the cold holding unit to ensure adequate cold holding temperatures throughout service. Staff moved several portioned food packages to the storage cabinet in the bottom of the unit at the time of the inspection. Item #23: No violations noted - Firm is making cold brew on-site, a container was observed in the basement walk-in cooler. The product was still within a 7 day shelf-life, however, the product was labeled with a two week shelf life. Extending the product of a shelf-life may require a HACCP plan and/or variance with the regulatory authority, which would be required to be approved in advance. Person in charge stated they would put a 7-day shelf life on the product moving forward.
