Discussions with the person in charge: Item #22: Discussed with management the importance of monitoring temperatures in this portion of the buffet to ensure the unit is working properly and maintaining adequate or safe cold holding temperatures. Additionally, reviewed other contributing factors to observe and/or train staff on in this area; food employees checking and logging temperatures daily (if deemed necessary by the firm), increased management oversight, using smaller pans, switching the type of pans foods are stored in to maximize cold air transfer, keeping products cold until stocking the buffet and only placing items in the buffet after the units have been on long enough to cool down to safe temperatures first.
