A Routine inspection was conducted on 7/15/26. Violations are listed above. A Letter of Correction will be conducted on 7/27/26. Manager agreed to send the Inspector photos of the corrected violations. Long term corrective action to be completed on 8/17/26. Long Term Corrective Action: On last Routine inspection 2/6/25, was marked out for same violation. Item #22: Owner agreed to provide retraining to staff regarding required cold holding temperatures of 41 degrees F or below for all TCS food products. Inspector discussed different methods to achieve this by nesting products in ice, storing them in alternative locations of refrigeration units, or by using time as a method of control if method is written and food products are identified with a label and monitored. Manager agreed to send the Inspector time/temperature log book sheets for the time frame till 8/17/26, unless another method is being used. If further questions, contact me at sherrie.petersen@scottcountyiowa.gov Follow-up will be completed on or after 7/27/2026 by Follow Up-Letter of Correction.
