This was a routine inspection of a full-service caterer at a 3rd party kitchen. Reviewed with the person in charge that about running high temp dish machine several times up arrival the kitchen to ensure cutting board is sanitized adequately in between service of raw meat verse cutting vegetable. The inspector will discuss with the facility owner about, arranging items, removing or repairing unused equipment.
