Not in violation at this time. Discussed with the person in charge the holding cooler located in front of the kitchen grill. Person in charge stated that the food items were prepared and placed in the cooler this morning. Food items were observed at temperatures ranging from 41.0°F to 44.0°F. During the inspection, the inspector monitored the cooler and observed the temperatures decrease. A temporary increase in temperature was noted due to frequent opening and closing of the unit during the morning rush. Continued monitoring of the cooler was discussed with the person in charge to ensure food items remain at 41°F or below.
