Routine inspection conducted at Hy-Vee for sushi area. Sushi logs are complete (dates checked today were 8/31, 9/1, 9/2). Operator was able to demonstrate how to calibrate pH meter and was able to provide the 2026 HACCP and current variance letter, as well as letters of destruction.
