  1. There was a container of cooked noodles sitting at room temperature. Noodles were at 87*F and were stated to have been cooked 4 hours previous. CORRECTED. (Noodles were discarded. Inspector provided education on cooling requirements and timeframes. Inspector further discussed cooling methods). 2. There was a container of meat stored at room temperature to cool. Meat was at 102-112*F and had been cooked an hour and a half previous. CORRECTED. (Meat was reheated to 165*F).

  1. All products in the tall reach-in cooler had internal temperatures of 46-53. All potentially hazardous products were discarded. RE-INSPECTION REQUIRED. 2. All products in the make-table were at 48-56*F. All potentially hazardous foods were discarded. RE-INSPECTION REQUIRED. NOTE - Containers of potentially hazardous liquid products/sauces were denatured. These products will be discarded at commissary due to no location at venue to dispose of liquid products.
