There were multiple containers of sliced meat on the middle and bottom shelf in the lobby reach-in cooler that had internal temperatures of 45-50*F. Person-in-charge stated meat had been sliced and placed in the cooler about 3 hours previous. Products out of temperature were discarded. Remaining products in temperature were moved to another cooler. Inspector observed ambient temperature of the top section of the cooler at 38-41 and observed the lower half at 46-47*F. The top shelf had multiple boxes of food and may have been overfilled (Note - Products on top shelf were within proper temperatures). CORRECTED. (After moving remaining products to another cooler, the ambient temperature of entire cooler decreased to 38-41*F. Inspector discussed ensuring that the top shelf is not overfilled to ensure proper airflow throughout unit. Inspector further discussed cooling methods and using smaller containers to help ensure products reach 41*F quickly after preparation). Staff will continue to monitor both ambient temperatures of the unit and internal temperatures of foods.
