MFC 3-501.16

Small chicken tenders in the front section of the middle hot cabinet had internal temperatures of 124-131*F. CORRECTED. (Chicken tenders out of temperature were discarded. Note - Only chicken in the front section near the swing door was out of temperature. All other chicken in cabinet was above 135*F. Unit had an ambient temperature of 163*F. Inspector suggested keeping small chicken tenders in the center of the hot cabinet to help maintain a temperature of 135*F or above).

MFC 3-501.11

Fries in the front reach-in freezer were at 33-41*F. Ambient temperature of reach-in freezer was at 50*F. Fries were moved to walk-in freezer. Cook stated they only place one or two bags into the unit at a time due to the unit not temping properly. Person-in-charge stated that the unit should not be used. Inspector discussed not using the unit until it is repaired. A "do not use" sign was placed on the freezer.

Ambient thermometers in the front walk-in cooler were not in working condition - One thermometer was broken and the other was reading at 22*F instead of of 35*F.
