  1. There was a build-up of residue that looked to appear like mold on the shelving racks in the walk-in cooler. REPEAT. 2. There was food residue build-up in gasket of the small reach-in cooler next to hot holding unit by drive-thru window.

  Products in salad bar line had internal temperatures of 43-50*F. Products had been in unit for 2 hours and were time stamped for a 4-hour time control of 9:30AM -1:30PM. Time-as-control will temporarily be used for salad line. Products shall be time-stamped. RE-INSPECTION REQUIRED. NOTE - Ambient temperature of unit was observed at 36-48*F. Unit may require maintenance. Person-in-charge stated that product is placed in the salad bar line at the same time that the salad bar line is turned on. Inspector discussed ensuring the make-table reaches 41*F prior to placing product in it. Inspector discussed getting a probe thermometer so internal temperatures of foods can be monitored. RE-INSPECTION REQUIRED.
