(Cook stated they rehydrated hash browns at 10AM. Hash browns were marked with time). 2. Observed rehydrated hashbrowns stored in the walk-in cooler spaced less than an inch apart as required by establishments submitted/approved variance. CORRECTED. (Cartons of hashbrowns were rehydrated the previous day and were observed at 45-47*F. Cartons were spaced apart immediately).
