Sausage patties in insulated warmer had temperatures of 109-113*F. Establishment receives hot foods from Hy-Vee catering in insulated warmers and then places hot products directly into the hot holding cabinet or on a hot plate to keep warm. Person-in-charge stated that products were left in insulated warmers today instead of being placed directly in hot holding units. Receiving temperature was unknown. Person-in-charge contacted caterer. Caterer stated sausage had been cooked at 8:30 that morning. Establishment stops serving lunch by 12:30PM. Sausage patties were placed under a 4-hour time-as-control. Inspector discussed taking temperatures upon delivery to ensure product is at 135*F or above and to place hot products directly into hot holding units after receiving to maintain proper temperatures. RE-INSPECTION REQUIRED.
