Maintaining & Using Handwashing Sinks - Handwashing sinks are not kept clean, maintained and/or used as specified in the Food Code.

Observed food items in first hand sink and scrub pad and utensil in second hand sink located in sushi station. *****REPEAT VIOLATION, WILL FOLLOW-UP IN 3 TO 10 DAYS*****

Hot Water and Chemical - After being cleaned, equipment food-contact surfaces and utensils are not sanitized in accordance with the Food Code.

Observed no sanitizer made for cleaning located at sushi station and servers station located in kitchen area. Person in charge made sanitizer for stations at time of inspection.

When to Wash - Food Employees did not clean their hands and exposed portions of their arms according to Food Code guidelines.

Observed employees to not wash hands after completing a task, removing gloves and moving to next task located in kitchen area and sushi station.

RTE TCS, Date Marking - Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours was not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, in accordance with the Food Code.

Observed several items stored in low boy cabinets to not have date markings located at sushi stations. Person in charge had all items dated at time of inspection. *****REPEAT VIOLATION, WILL FOLLOW-UP IN 3 TO 10 DAYS*****

RTE TCS, Disposition - Ready-to-Eat, Time/Temperature Control for Safety Food was not discarded in accordance with the Food Code.

Observed food items stored in sushi station low boys to be held past 7 days. Person in charge had all items discarded at time of inspection.

Plumbing system not maintained in good repair

Observed no drain plugs for 3 compartment sink located in ware wash area. *****REPEAT VIOLATION, WILL FOLLOW-UP IN 3 TO 10 DAYS***** Observed drain line from 3 compartment sink held in place with yellow twine located in ware wash area.

Equipment not in good repair & adjusted per manufacturer's specs

Observed door gasket for white deep freezer to be in disrepair located in expo station.

Nonfood-contact surfaces not cleaned at frequency to prevent buildup of residue

Observed ice and debris build-up inside of white deep freezer located in expo station. Observed ice build-up on ceiling vent located inside of walk-in freezer.

Package Integrity - Food packages were not in good condition and did not appear to protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants.

Observed food stored inside of open cans locate in low boy in sushi station and walk-in cooler located in kitchen area. Person in charge had items removed from cans at time of inspection.

Designated dressing rooms/lockers not used by employees

Observed employee bags located on counter located in expo station, employee keys and cell phones located on top shelf of make table located in kitchen service area. *****REPEAT VIOLATION, WILL FOLLOW-UP IN 3 TO 10 DAYS*****
