In-use utensils not properly stored between uses

Observed ice scoop handle touching ice in bar ice bin. Person in charge took out ice scoop out of bin at time of inspection.

RTE TCS, Disposition - Ready-to-Eat, Time/Temperature Control for Safety Food was not discarded in accordance with the Food Code.

Observed half avocados in low boy make table inside to go container without label to be oxidize. Person in charge discard it at time of inspection. Observed to go container with Canadian bacon without date and cover with dry corners and discolor it. Person in charge discard it at time of inspection. Observed Container with food without label from employee event. Person in charge discard it at time of inspection.

Mops not allowed to air dry after use

Observed mops not able to air dry in basement kitchen prep and main kitchen. Person in charge asked employee to hand mops to air dry at time of inspection.

Hot Water and Chemical - After being cleaned, equipment food-contact surfaces and utensils are not sanitized in accordance with the Food Code.

Observed bar dishwasher with low concentration below 50-100ppm . Person in charge prime it a corrected the sanitizer concentration at time of inspection.

Equipment & Food-Contact Cleaning Frequency - Equipment food-contact surfaces and utensils shall be cleaned according to the Food Code.

Observed 2 can openers with build up in blade. Person in charge took it to dishwasher at time of inspection. Observed build up inside bar soda nozzle. Person in charge clean it at time of inspection. Observed dust build up inside ice machine door corner. Person in charge clean in at time of inspection. Observed build up in 3 kitchen knives. person in charge took it to dishwasher to clean it at time of inspection.

Physical facilities not maintained in good repair & cleaned as often as necessary to keep them clean

Observed dust build up above dirty glasses rack ceiling vent.

Common Name, Working Containers - Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies are not clearly and individually identified with the common name of the material.

Observed 1 chemical spray bottle not label in the dry rack shelve corner. Person in charge add name at time of inspection.
