Observed build-up on can opener blade located on prep-table next to pizza oven. Person in charge washed, rinsed and sanitized can opener at time of inspection. Observed build-up on ice machine catch plate next to ware washing shelf. Person in charge cleaned catch plate at time of inspection. ***REPEAT VIOLATIONS WILL BE ASSESSED IN 3-10 DAYS***

RTE TCS, Date Marking - Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours was not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, in accordance with the Food Code.

Observed 2 containers with cooked shrimp to not be date marked inside of seafood make-table drawer cooler. Person in charge date marked containers at time of inspection. Observed 3 containers with pico de gallo to not be date marked inside of walk-in cooler. Person in charge date marked containers at time of inspection.

Food not protected from contamination by another source

Observed 1 container with pepperoni to not have a lid inside of pizza make-table drawer cooler. ***REPEAT VIOLATIONS WILL BE ASSESSED IN 3-10 DAYS***

In-use utensils not properly stored between uses

Observed scoop handle touching seasoning inside of container on shelf next to ware washing shelf. Person in charge moved scoop at time of inspection.

Equipment/utensils not air dried after washing, rinsing & sanitizing

Observed multiple plastic containers wet stacked on ware washing shelf next to walk-in cooler. ***REPEAT VIOLATION WILL BE ASSESSED IN 3-10 DAYS***

Using a Handwashing Sink - A handwashing sink is not maintained so that it is accessible at all times for employee use; is being used for purposes other than handwashing or is not being used in accordance with manufacturer's instructions

Observed a bucket inside of ware washing hand washing sink. Person in charge removed bucket at time of inspection.

Physical facilities not maintained in good repair & cleaned as often as necessary to keep them clean

Observed build-up on floor throughout walk-in freezer.

Plumbing system not maintained in good repair

Observed 2 out of 3 drain stoppers on 3 compartment sink. ***CRITICAL VIOLATION WILL BE ASSESSED IN 3-10 DAYS***
