  Time as a Public Health Control - Time/temperature control for safety food before cooking, or for ready-to-eat time/temperature control for safety food that is displayed or held for service for immediate consumption was not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.

  Observed sausage rolls, tomato puffs, biscuit & gravy croissants, and ham & gruyere croissants held at room temperature without a time marking. Person in charge stated food had been out for less than 2 hours and put a time marking on the food items. Discussed using hot holding or time as a public health control for these particular food items.

  When to Wash - Food Employees did not clean their hands and exposed portions of their arms according to Food Code guidelines.

  Observed front employee to put on gloves after cashiering and not wash hands. Employee was instructed to wash hands after cashiering and before putting on gloves to assist the next consumer. Employee complied.
